We don’t come from a long line of olive oil makers. There’s no century-old legacy behind us. But we do have a story — one rooted in passion, purpose, and a deep respect for the land.
It began with Benedetto Grassi, who looked at a neglected forest and saw potential. Where others saw decay, he envisioned an olive grove — a way to restore the land and cultivate something meaningful.
Then came Angela, born in the United States, who found her calling in Italy. What began as curiosity grew into expertise, as she became a certified olive oil taster, blending international perspective with Italian tradition.
And there’s Mirko, who left behind outdated farming methods to pursue real quality. Driven by research and innovation, he focused on producing oil that reflects purity, balance, and depth.
Their journeys are different, but their goal is shared.
The result is an olive oil that tells a story — rich in character, layered in flavor, and made with heart.
Our Products

Leccino
Made exclusively from Leccino olives, this oil has delicate and refined aromas of yellow apple, pine nut, vanilla, and aromatic herbs. On the palate, it presents a light to medium fruitiness, with a pleasant balance of bitterness and pungency, adding complexity and depth without overwhelming the senses.

Leccio del Corno
Aromatically intense, with distinct notes of green almond, aromatic herbs, thyme, and rosemary. On the palate, this oil is complex and herbaceous, with prominent flavors of artichoke and sweet almond. The bitterness and pungency (pepperiness) are well-balanced, providing a harmonious finish and an explosive sensory experience.

Grignano
Intriguing aromas of citrus and pink grapefruit, wrapped in green almond, green apple, and aromatic herbs. The taste is harmonious, with pleasant bitter and peppery notes.

Pendolino
Fresh aromas of green almond and artichoke intertwine with aromatic herbs and a hint of asparagus. On the palate, it is harmonious and complex, with subtle hints of pine nut and legumes. A medium fruitiness that captures the freshness of the mountains, supported by well-balanced bitterness and pungency that provide liveliness and depth.

Sbresa
Made exclusively from Sbresa cultivar olives, this oil opens with notes of green almond and artichoke, followed by aromatic herbs and sweet almond. In this oil, the medium fruitiness encapsulates all the essence of the Sebino region. Well-balanced bitterness and pungency make it a complex and harmonious oil.

How We Make Our Olive Oil
A Carefully Managed Journey — From Blossom to Bottle
Extra virgin olive oil is a complex and refined product.
To ensure the highest quality, we personally oversee each step of the production process — from the blooming of the olive trees to the storage of the final oil. Every phase is handled with precision and care.
Harvesting: The Most Crucial Moment
To preserve the oil’s full aroma and flavor, we minimize the time between harvest and pressing.
During the 2–3 week harvest window, our work is non-stop:
- Each olive variety is harvested separately, so we can highlight the unique qualities of each cultivar.
- We harvest at the start of veraison — when the olives begin to change color — a delicate stage that yields an exceptional oil, though with a very low extraction rate (just 8–9%).
Olive Selection: Only the Best Fruit
We use only healthy olives for our extra virgin oil.
Right after harvesting, we hand-sort the olives, removing any damaged or imperfect ones — because even a single bad olive can affect the flavor and purity of the final product.
Crushing & Malaxation: Total Protection from Oxidation
During crushing and malaxation, we eliminate exposure to oxygen.
This careful control helps prevent oxidation, preserving the oil’s freshness, aroma, and shelf life.
Immediate Filtration: Absolute Purity
We filter the oil immediately after pressing, removing any impurities or residues that could compromise the balance of the oil.
This step ensures clarity, stability, and long-lasting quality.
